ACTI - Activator, usually something like a light switch, plant, etc.

ALCH - Alchemical item such as plants.

AMMO - Ammunition

BOOK - Book, usually one that's actually usable.

CELL - Cells are areas in the game that make up the game world. Each interior is in its own cell.

CREA - Creature

DOOR - Usable doors, often used to teleport the player into cells.

ENCH - Enchantment, such as Stimpak's healing ability.

EXPL - Explosion

EYES - Allows you to edit eyes.

FACT - Faction, all NPCs and creatures are assigned to one.

FURN - Furniture

HAIR - Allows you to edit hair.

MESG - Message, such as ones you see ingame that appear in the top left.

MISC - Miscellaneous item, such as random junk.

NOTE - Note which can be activated to show some information.

NPC - Non Player Character, these are people in the game you can't play as.

PERK - This is where you can make new perks for your character.

PROJ - Projectile, which is what comes out of the guns.

QUST - Quest

RACE - Race, such as Caucasian, African American, etc.

WATR - Water

WEAP - Weapon

 

EDIT...

 

HDPT - Headpart, eyes, hair, beards, etc.

MAPM - (Not entirely sure) Mapmarker, these are what tell you where a town is on the map.

RCPE - (Note entirely sure) Recipe, allows you to mix ingredients together to form a new item.

REGN - Region, encompasses a larger amount of cells.

REPU - Reputation, this only affects factions such as the NCR. This is how you get the "Villified" rank.

 

 

I don't know the rest of them.
