In my fresh install there are 14 files and folders just in the top level of the data folder from New Vegas itself, not to mention countless more subfolders and files in the folders it creates under the data folder. And I don't currently have any DLC, that's just vanilla. So each DLC will add at least one plugin and probably lots more files to boot. It is possible someone out there with a clean ghost image of NV with all the DLC can send you a screen of the folder then you'd be able to know for sure at least at the top level what's safe and what's not.
