These dragon bones are heavy...

Get a companion, make them carry it. I did this with Lidya (or whatever her name was) until she got teamed up on by some wolves and died. Then save up some money and buy a house before you're put in the situation I was - a lot of heavy gear, a dead companion and the middle of nowhere.

Start saving for a house, early.

I'm currently in the same situation having just taken down my fourth dragon and I'm now about 1000 gold of being able to afford my first house.

It'll be necessary. Companions are risky in case, as in the above situation, they die.

So what would happen if I dumped them in some random chest or sack and came back for them later?

I remember in Oblivion you could only do this in certain chests, or your stuff would disappear after a while. However, in Fallout 3, I think it was safe to dump your stuff in any container. Which system does Skyrim use?

I did this until I was able to afford a house. My stuff didn't disappear. I dumped my stuff in one of the cabinets in the kitchen of Dragonsreach. I saved before doing so just in case and it worked out well for me.

Seeing as how dungeons don't respawn for a couple of hundred hours or so, I'd guess you'd be pretty safe. That would be reflected in chests, right? I don't know though, so maybe you should test it out.

Are the dragon bones and scales good for making anything?

As far as I can see, they're used for making Dragon Amour, which you need to have every perk in the smithing skill to unlock - Light and Heavy.
