Editing meshes on a mac

Ehm, I do know nothing about the Mac and I'm not quite sure what You are asking for. If you want to edit vanilla models you will probably have to extract them from the bsa files. Then you may want to make use of a tool like this one:

I'm not pretty sure that you will get happy with an actual version of blender though.

I do not know whether you could have to stick to an older blender version like 2.49b

Thank you for your reply.

 

I have learned a great deal since posting my question and I will check out the hints you gave me. My interest began with my desire to create mods for skyrim. Now I am mainly interested in obtaining character meshes in .blend format that I can trust will deform well when animated. Also, I would prefer to avoid paying for them.
