Hopefully this is something that can be fixed pretty quickly with modding. Fallout3/New Vegas had only three equipment slots (head, body, face), and it did not take long to get more slots added for new items or items imported from Oblivion.

plus another change they did in Skyrim, is the ability to only wear 1 ring this time :(

I agree completely. Along with the integration of the armor into only "armor" for chest, helmet, bracers or gauntlets and boots, this really limits your buff capabilities over Oblivion. The armor change isn't great, but I can live with it. I just totally don't understand the ring thing though. At least you can still wear a necklace. Necklace and ring will have to take the place of two rings. Of course, if they fixed the levelling up of monsters so that you don't end up having trouble with even wolves and simple monsters when your guy is level 50-80 it still shouldn't be bad. Oblivion could be really frustrating with how everything levelled up alongside your character!

That really ticks me off too. I swear their reasoning for it would be because "the other hand is for a wedding ring".
