SnakeBite long installing without end...

Have you modified the SnakeBite dictionary at any point? This is usually caused by the dictionary having an updated entry for the mod that's being installed. It can also be caused by the mod having an updated name with the dictionary still having the old name. If you haven't modified the dictionary, you might want to ask the mod author if they've updated their SnakeBite's dictionary as it can conflict with other mods.

Shouldn't be a problem. SnakeBite 0.8.3 still works with the latest version of MGSV.

In your SnakeBite's installation directory there should be a log.txt file. Could you open that with a text editor (i.e. Notepad++. Don't use normal Notepad, the text will be unformatted) and paste what the last few lines say?

Ok, I've never actually seen SnakeBite get stuck there before.

What I would recommend doing is verifying MGSV's game cache and reinstalling SnakeBite. From what I can tell, SnakeBite is never actually even trying to install the mod, it's just getting stuck on extracting 00.dat for whatever reason.
