Recompiling Bethesda Meshes w/o Shadows

There are a few meshes in-game that do not properly display shadows even at max settings. Presumably compiled that way for performance reasons. However, it causes a bit of a bump in immersion when it looks like certain plants are just pasted over the screen when others have depth from shadows.

 

Does anyone happen to know where exactly in the process that meshes are given their shadow properties and also has the process of compiling a mesh for Skyrim been discovered yet?
