The most fun I've had playing this game, which just happened, took place in Lost Knife Cave. I'm a level 12 and I'd classify it as a rogue/warrior. I sniped down two archers before they caught onto me, dual-cast fury onto the biggest, meanest guy in the room, and picked the expert lock on the saber cat's cage. Took some cover and started sniping enemies. Made sure the saber cat wouldn't make it past all the bandits with a couple shots to the face. When the remaining skirmishers approached I nuked them down with dual-wield power attacks, and proceeded to chase down the archers and do the same to them. It was very satisfying to conquer a large camp by means other than complete brute force (DPS spells or frontal assault w/ weapons). I'm lovin' this build.

This is what it will probably pan out to, though if I make it past 60ish I'll fill out sword crit and more archery stuff. Keep in mind I'm a vampire, so I have mad sneak and illusion bonuses.

As for mages w/ heavy armor, it's just an idea. Idk the numbers on whether or not it's that much better than the "mage armor" perk when ranked up all the way, but the enchantments only work w/ armor so I figured you could more than make up for any deficit with crazy armor enchantments.

Im currently going for a 'canon' dragonborn, namely a nord who kills things with swords. Although Ive recently started to level two hand as Ive gotten Wuulthrad, which is a piece of pure win. I dont know any spells but the default ones, I dont know any enchantments, and Ive never made a potion. I have however maxed out smithing, almost maxed out heavy armour, and I have all other 'physical' skills (ie non magical ones) in their mid fifties. He is the harbringer of the companions, has liberated skyrim from both the dragons and the thalmor-controlled empire, and is currently doing some extention 'quests' such as hunting down imperial camps, finding totems of hircine etc etc.

My next character will be a mage, in my 'battlemage' build I like using from previous games. This is primarily destruction based, with light armour not heavy arnour, although I also level up the other schools of magic without focusing on them. I dont do more than a smattering of alchemy, but enchanting gets a fairly decent boost. I would normally go with breton, as I see them and nords as the human races, imperials are bellends in my opinion. However given my experience so far, I may go with an altmer for the first time ever, to fit in with the Thalmor. If I can bring myself to join in with such f@&#!try.
