Oblivion/Skyrim Pros and Cons of each

Skyrim:

Better graphics (duh)

Not having to constantly repair every dang piece of equipment every two minutes

Models look more real, less like PlayDough

Melee combat more entertaining

Larger battles with many units at once

Better voice acting - every Redguard in the game is not voiced by the same person, unlike Oblivion

Far Better AI - I love watching random encounters fight each other sometimes

Consistent Landscape - Skyrim's climate ranges from "Canada" to "Pluto" while in Oblivion, in the span of two days on foot, you could go from swamps in Bravil to snowdrifts in Burma. Guess which one is more believable?

Better Plot - You can actually choose a side in the main quest line

Crafting - Not just for spells anymore!

Oblvion

Better UI - 1 thru 8 hotkeys far superior than "favorites" list, but sadly Skyrim was really just made for the Xbox, and the PC version was more of an afterthought.

Far Superior Magic System - Make your own spells, the way YOU want them to work!

Better Health System - Hitpoints were based on you constitution & strength, Magic was based off your intelligence and will, and neither was based directly off your level.

Ability Scores - Remember those? You actually had them back then.

Better Birthsigns - No, I really don't like being able to switch them, and I certainly don't like having to travel to the ends of the earth to find the one that I would rather have just picked during character creation and been done with.

Better Lockpicking - Many will disagree with this, but frankly just porting the exact same system over from Fallout3 just struck me as plain lazy.

Better Guilds - Yes, Skyrim still has faux-similies of the classic guilds, but I liked the more direct & honest approach to them that Oblivion had.

Better Housing - A house in every city, and honestly, does anything in Skyrim compare to Rosethorn Hall?

Oblivion had a lot more spells. Also, the spell making thing was really friggin cool and I miss it.

The guild quests were more original in Oblivion...

The favorites thing < hotkeys.

I miss the Oblivion lockpick minigame.

Skyrim is by far very much superior in my mind, and hopefully the CK will be another thing that will continue to make me feel so.
