Change Quest Stage on Pickpocket

'Lo. Having some difficulty with the Creation Kit. What I want to do, is use a script to detect when a player accesses the inventory of a specific unique NPC (through Pickpocketing) -- and then, set a quest to a new stage. Ideally they shouldn't have to actually steal anything: simply seeing their inventory (and what item it contains, a stealth boy) should be enough to further the quest.

 

Problem is, I don't really know how to trigger any script for this action. I've googled around, experimented a bit, but I haven't found anything. Cheers if anyone can help me here.
