Think of it this way, wouldn't it seem odd that you could pickpocket Daedric armor right of the Dremora when he's patrolling? It doesn't matter how good you are, the Dremora would naturally feel the cuirass being pulled off him. It probably won't happen, solely because it just seems like a really funky idea. The way pickpocketing works is hard coded, you can only pickpocket non-equipped items. This means that you would have to have scripting which would cause an NPC to unequip everything when you pickpocket them. Needless to say, such a script cannot be used in any way that wouldn't cause serious issues with the game. Additionally, the weight of your usual equipped items usually makes them something that most NPCs would catch you on. Try pickpocketing the armor off of a sleeping guard some time...
