Looking for help to create arcade/kiosk mode's of pc games for a project.

Hi modding community. I have built some arcade machines that I take to events and this year am planning on putting a load of them in public places near where I live. They will be free to play local multi player games. It's a bit of an experiment to see how they are used. My main problem is the games I use aren't made with an arcade kiosk in mind. I'm wondering if anyone can help me mod them (I have a small budget). Simple things like taking the exit option off. Simplifying the user interfaces etc. I have a list of things. I use games like mount your friends, nidhogg, samurai gunn etc. Any help or recommendations or anything would be most appreciated. Ideally looking for a future collaborator who is passionate about this stuff. Also plan on permission from the game makers. Cheers.
