Texture's are shiny/see through in game?

So I textured the stormcloak curaiss to have solitude scales as opposed to that ugly leather cloth.

 

However,

 

When I use the solitude _n file and rename it to the stormcloak curaiss _n file, my textures become shiny.

 

When I don't, the textures have little dots that are clear and that annoys me.

The reason behind the excessive shine is most likely due to a high value set for gloss in the .NIF file of the respective cuirass model. Due to your texture being a different shade of colour than the original they develop a tendency to appear far more glossier than expected. To overcome this problem you might want to lower the value set for glossiness and see if this solves your problem.
