Greytale
This may be a completely moot point to make, but... I actually play in offline mode because I CANNOT allow Steam to even have a CHANCE of updating the game: I cannot successfully play the game if it's Skyrim v1.2 or 1.3 or whatever--it causes a VAST amount of problems... all of which are unfixable for me ATM... So... I'm forced to stick with good ol' 1.1.21 or whatever. Which works just fine for the mostpart... the only major glitch was getting the Greybeards to "do their job" in the beginning of most everything... complete their custom paths + give/award me "shouts" and generally help move the main questline along. Which is fine--I simply FORCED things along by using ~ + setstage MQ105 and blah blah blah. Granted, it was a little bit disappointing and sort of takes me out of the "fun of immersion" to a point, but... oh well. The alternative was allowing Steam to constantly update Skyrim (no matter WHAT I set that stupid "don't update automatically" checkbox to)... and it would literally break *TONS* of things... :( It's not my system specs, either--I have a Radeon 6950 (2GB - I think a Sapphire edition--one that CAN'T unlock the 6970 shaders, unfortunately) + a Quad Core (Q8400) @ 2.66Ghz. Come to think of it, I guess it doesn't matter about the extra cores or something?? They don't get used correctly or something?? *sigh* Anyhow. I just assume leave Steam OFFLINE no matter what as... what good does it really do your gaming experience except suck down resources and take up CPU timeslices? :)

There's rarely a time that I'm on Steam that I'm not talking to one of my friends. It also makes it very easy to connect and join games my friends are playing. Other than that, there's not really anything that makes online mode better than offline mode.
Stormcrown
Yeah. I play Skyrim online because I usually am in one of the Skyrim chat rooms, which makes the game fun when theres other people you can share your fun with. It sort of helps to compensate for the lack of multiplayer. ^_^ (Not for long, from my observations of Skyrim Online/SkyNet)
