Pretty much like how Oblivion kept track of things. I'm pretty sure I've seen someone asking about this already, but I wasn't able to find an existing request thread. I can't tell you how many times I've gone through the vanilla journal and (even on the main faction and dovahkiin quests) looked at an entry for what I was supposed to do and thought, "wait, who the hell is this person and what am I doing?" "Who's Igmund...?" Etc. It happens pretty much every day I play. The journal wouldn't even have to have anything custom/unique written down. Maybe for completed parts of a quest it would copy the original "uncompleted" text somewhere. For instance let's say you're supposed to kill a bandit leader. Normally after you complete that step all you see is "return to <npc_quest_givers_name>". With this mod somewhere it would allow you to look up what you've already done and you'd see, "kill bandit leader in Fort ChickenLips = Complete" or something.
