JanusForbeare
Audacity is a solid program (it's free, too). However, be aware that Skyrim runs dialogue from a proprietary file format (.fuz) specific to the Creation Kit, which we don't have yet. As far as I know, .fuz files contain audio information in .xwm format as well as lip sync information in the old .lip format from Oblivion. There are a few tools floating around already to create your own .fuz files, but as far as I know, no one has managed to get the lip sync working yet. You can record your own dialogue already, but I'd wait for the CK before you start packaging it.
