[LE] How to change NPC model/appearance

Can anyone tell me on how to change the character models for NPCs?

Here's what i want to do,
I'm currently using the Ordinator perk mod and there's a perk there that lets you create skeletons.
Now i want to make the created skeletons look like the shades on the Meridia quest or look like regular Draugrs or the armored skeletons on the Dawnguard DLC.

Any help would be appreciated.
