I would of recommended the original Skyrim (plus if you had the Legenday Edition before Special Edition then you would of gotten it for free anyway) since it has a larger variety of mods. If you have lower pc specs then I would recommend Special Edition since you'll kind of get that ENB feel to it while having some smoother gameplay since skyrim LE is capped on fps. I think i will stick with the original like you said as there seem to be some mods i like to use that are not available in the special edition and just more mods alivable due to the last 5 years. It is superior to Oldrim in every way but at the moment, there aren't a whole lot of mods for it. SKSE is in the works and it shouldn't be too long but if you plan on playing through right now and are looking to play a very mod heavy play-through then Oldrim is the way to go.
