Kelgen
I would like to see Two new animals and then incorporated into the world to add emersion. Bats would be a nice additon. You walk by a crevas or a cave/lair/dungeon and you see the occasional bat fly out/in. There can be some caves that do not have bandits, treasure, or anything inside them, but serve as bat caves. Not many in the land, maybe 1-2 per hold. At night hundreds of bats fly out in a stream and dissapear to populate the night sky. White Bats, Dire Bats, Vampire bats, Northern Fruit Bat. Do a homage to Ace Ventura but make it serious and a quest involving the GREAT WHITE BAT! Also adding snakes would be a nice touch. An Ice Viper, Snow Snake (a skiing joke I've always had with my family, can cause you to stumble!), Tundra rattler, Pine Snake... who knows. So many choices These two animal chains can also provide interesting Ingredients and food. Maybe Snake meat once eaten restores 5 hp cooked, and raw heals for 1 but gives 5% poison/disease resist. Snake venom can also be in viles and applied to weapons.

Kelgen
ive seen bats in bleak falls bearrow near the word wall at the end (not sure if u mean something like that or more like animals that can be attacked and killed I mean bats that can be killed (the larger ones) and smaller ones harvested like butterflies, Caves that you cannot enter in that far without vision blur and hp lowering. (the fumes from the Guano can kill you IRL). You can have a chance of a bandit corpse inside the mouth (he went in too far). Snakes that follow the same kill/harvest as the batsl, and you can be bitten by them. They should be smaller though to emphasise the danger of tall grass and wandering off the path (but lower agression) unless the creator likes the idea of one or two types being large and agresive, contrary to most snakes temperment.
