More specific skills to allow for better character differentiation

There aren't a whole lot of skills in the game, and many are very broad such as science and survival. What about replacing the science skill with biology, chemistry, physics and maths (and hacking I guess)*. Cooking, skinning, endurance, wilderness knowledge, e.t.c for survival?

 

It would be possible to make more unique characters. In addition, people who like realism should like it, since it makes much more sense than Vanilla.

 

Is it possible to extend the skill list? I'm guessing "psuedo-skills" via variable would be possible, though that would be a bit cumbersome.

 

I know the chances of it happening are pretty much nil, but does anyone at least find the idea interesting enough to discuss (and not just as it pertains to New Vegas either)
