The flying is possible already because of this mod : http://skyrim.nexusmods.com/downloads/file.php?id=5148But it looks odd without the horse having actual wings. Me thinks it's a great idea to add a Pegasus mount, a few modifications to the skeleton and you'd even be able to add animations to the wings such as extending wings while sprinting and so on.
