Has anybody ever thought about using the horses in races, with bush fences to jump over? Perhaps a bit of a money maker for the winner Perhaps even part of a bigger entertainment complex where their can also be a gladiator style arena like there was in Oblivion, given that Skyrim is part of the Empire it should still be within lore. And what about Archery contests...
