get this nifty little program called TESGecko. It's great for when you want to "undo" changes you didn't want to make, such as deleting dialogue.

after you get Gecko installed and started up, click on display/copy, then select your mod.

delete the subfolders for anything you want to get rid of. There will be a folder for all the categories in which you made changes that were saved as part of your mod, even one labeled "dialogue". You can also choose "ignore" for anything you want to get rid of.

This is the concept with using Gecko, you're not really undoing or restoring any changes, you're taking the changes out of your mod, and the game then loads the original vanilla data.

It's a must have app for all beginner modders, it's saved my butt a couple times now.

ALSO: Try setting up patrol paths for your cattle within the area that you want them to stay. Add a locked gate with a key. I think you also might want to set them to player faction, so they don't run from or try to attack you. This should keep them rather passive.

The TESWiki has all the instructions you'll need to accomplish this, it's actually not that difficult once you set up a couple NPC's and get the hang of it.

ps: make sure the cattle have enough bedrolls that they can actually sleep on.
