All 3 use the same pose though, so I imagine one would only need to make it once and rename it for the other 2... And even then, it's very close to a pre-existing pose, only the sword's positioning need to be changed. I'm sure it could be done quite quickly by someone who knows how to animate, at least a lot more easily than a LOT of the mods I see being put out there. As far as interest, there's no end to the people who want Nightmare in Oblivion, the people who want new animations/poses for two-handed weapons, and those who want both... But theres a mod that changes the one handed sword stance to one very, very similar to as you described. You could easily change the name of that file to replace the two handed blade stance. (I don't think using a 1 handed sword would be the best option though, and the whole point is for them to be used for two handed weapons. Not that the same pose wouldn't be awesome for 1 handed swords as well, so if you can find this mod... Anyway, do you really think just changing the file name would work? You'll need to put the file into mashes/characters/_male... but first change the name of the file from onehandidle to twohandidle, onehandturnleft to twohandturnleft, etc. Should work.
