I want to get the dungeon and town packs as well, but do I have to make separate "texture" folders in the data folder for each one of these mods? (dungeons, misc, towns, etc) Or, can I just put them in 1 big "texture" folder?

If that is the case, just install them as normal. If you need help with that, I would suggest just using NMM, as this works with NMM, as it is just textures.
