I have problems reading gray dialogue options on some backgrounds and I was looking for little more color in the game anyway. Is there a config file or some tweak that can do it? I was about to post and tell him to suggest to the SkyUI author to add the dialogue menus, but your solution looks much better. @Sergeant Rock and @kevkiev Your welcome. I made my inventory's text green so it looks like an old computer terminal; it doesn't fit very well with the environment of Skyrim, but I like doing it anyway.
