At 1920x1080 all you are doing is enlarging the picture, similar to enlarging an image on your computer. From a distance you might not notice it, but close up you see a difference. More detail, less dithering/pixilation. Of course your machine/video card has to have the juice to handle the extra memory/processing of the larger textures.
