Invisible Text on Menu Screen (Missing Fonts?)

Recently did a clean install of FO3 and followed this guide (https://www.nexusmods.com/fallout3/mods/23468?tab=description) for modding. Nothing too crazy, just a lot of textures for the most part, but i'm having an issue with text being invisible. On the menu screen the "buttons" are still there and can be clicked, just invisible. I still have mouse control. If I can navigate the menu blind and load into the game, all text there is invisible as well. I like to think I have a good amount of experience modding bethesda games, but this is doing my head in. Any and all help is appreciated!
