It would be all the better to have a direct carry over with medieval and pre-medieval literature and to experiment with their presence in Skyrim. Of course, they would shift in and out of being Lore-friendly, but the quest lines would be solid, and pretty interesting to experience, although only if done well. Many of the early Shakespeare plays, Greek plays, Tales and Epic Journeys would all appeal. Canterbury Tales, Odyssey, seige of Troy, Epic of Gilgamesh, ex cetera. If this were to interest anyone, what is most important is accuracy to the text. I'd only advocate of a literature enthusiast, if there be any, to make such a mod. Perhaps Beowulf would be the mos effective start, as an essentially Nordic hero journeys to an allied nation to aid a people and rid them of a hideous and powerful demon who attacks each night, ripping each and devouring them. The hero, or character, would kill the demon, kill its mother at the bottom of a lake, and later become king of another land, and defend it from a dragon who protects a tower of treasure. Lol, but of course, I would expect any moder to actually read the tale and be as accurate as possible, names and all, with tinges of creativity when necessary. Coincidences in things such as Hrothgar being the king of the Danes are only coincidences in regards to establishing the story, and that can help in providing better for the continued accuracy to lore.
