Herdsman of Skyrim: Deer (Caribou), Goats, Mammoths, Cattle and Horses

As I wander throughout Skyrim, I can't help but notice. Where are the herdsmen? The shepherds? There are goats, Caribou-like Deer, Mammoths. There would probably be wild cattle and possibly some stray horses.

 

The Giants travel around with their 'tamed' Mammoths. I can't see why there wouldn't be both stationary and nomadic folks with their tamed animals. After all, if Skyrim can support herds of Mammoth, why not others?

 

Not only as an encounter with these shepherds/herdsmen, but also an option for the player to have their own herds or even tame animals to take back to their homes or sell to farmers. Trading these animals as well as their goods would also be great. There could even be possibility of conflict between these groups of herders/shepherds and others, as well as conflicts with wild animals or quests to reclaim strays. And breeding could get interesting.

 

Items to be traded could be pelts, wool, antlers/horns, milk, meat, bones or herding/shepherding tools. Then you could even get into having guard/shepherding dogs to guard the herds.
