Help with conversion from Oldrim

Hi, this is my first ever post here! I've been modding with Oldrim for over 5 years now, and with corona keeping me at home, I finally made the jump to SSE. I hadn't made the jump yet mostly because of the lack of mods, and not understanding how to convert, but now I see that most of my favorite mods have been converted, and also that converting isn't as hard as I thought.....seemingly....I'm still getting the hang of it....

 

So I am trying to convert some mods from Oldrim and I have successfully converted a couple NPC replacer mods and an armor mod so far by simply using the Cathedral Assets Optimizer and then running the .esp in Creation Kit and saving it to update the format. But now I'm trying to convert an old Monster Hunter mod that adds armors, a couple weapons, 2 followers, a mount, and several new creatures. This mod uses an .esm file. I used the exact same method, and the weapons and mount appeared just fine (don't know about the creatures, I didn't test that far) and the two followers. But the armors didn't convert properly. For the armors that the followers wear (full body cat costumes like the cats from Monster Hunter), the shape is correct, but it is just a solid gray color. Here is an image:

And when I try to use the same armor on my character, I disappear completely. The other armors were similar, though portions converted properly. The helmet, arm, and leg parts looked fine, but the body portion looked just like these cats. What do I need to do?
