LE Big mount with "platform" on top of it

Hi. I recently saw the LOTR movies again and it got me thinking, is it possible to make an oliphant/mumakhil or something similar? (for those who dont know, they're the huge "elephants").

Making the mumakhil itself is probably just resizing and reskinning a mammoth, but how about the "platform" on top of it?

A "walk mode" where you would stear it from the very top, or maybe sitting on its head. And then you would dismount it and be on the platform where you could shoot etc, while the mumakhil ran around and hitting people(like mammoths do).

I have seen mods that made a mammoth mod, so THAT isn't the problem.

The platform is no doubt the hard thing, but is it do-able in the skyrim engine?
