As far as the purchasing of your items that would be covered by a script which calculates (randomly) what you sold that day. The lower-priced items being more likely to have sold and the higher priced an item being less likely but still possible. There would probably need to be a secondary script that factors in people's haggling skills both of the vendor (either you or hired help or spouse) and randomly generated NPC values which would give you the net value of each item sold.

 

Visually, it gets a bit tougher to make stuff happen. There might be enough vanilla dialogue to handle transactions made by NPCs.

But, if you actually have certain people in town passing by and buying from your store things would not have to be as randomized in the scripts. The actual characters involved would be factored in and then what they buy would be random but also based on the money they carry around.
