How to install/use Vortex with Stardew Valley that already has numerous mods installed?

I've been manually installing mods on Stardew Valley and now have at least 30 mods. If I want to start using Vortex, do I need to redownload every single mod thru Vortex? I don't want to lose all the mod configs.

You don't need to download any mods "through Vortex". Manually downloaded mods are fine.

As long as you have the original downloaded archives (zip, rar, etc), you never have to download them again.

 

The canon answer is delete your game directory and reinstall Stardew Valley, so you start clean. Then just drag all those mod archives to the Vortex mod window.

 

That said, Vortex considers anything in the game directory to be "the game". You can consider where you are to be the starting point.

Add any new mods through Vortex and you should be fine. Caveat: Do NOT use multiple mod managers, like NMM or MO2 with Vortex. That way lies ruin.
