Ok, as I said, your mesh is not set up as a creature like that linked mod is therefore it won't act like one so what you're trying to accomplish is not possible based on your model. Turning the mesh to the side is the least of the problems here.

 

Your model would need to have the animations removed and be rigged to a creature skeleton (at which point you can turn it sideways) so it can be set up as a new race and npc in the CK for your follower. Rigged meshes cannot have animations (at least not the complex animations in the model).
