Freezing after going inland and unbinding controls

So, I saw this video early last week and, being a big fan of Dark Souls myself, I thought I would reinstall Skyrim to give just about everything in it a go. That means I've got all of the armors shown off installed, as well as most of the UI mods. I also have TK Dodge and Immersive animations installed.

So, to get to the point, I have two major problems right now. I started up in The Chill just outside of Winterhold using Skyrim Unbound and as I was setting up controls I ran into my first problem, that being I can't unbind any controls through the pause menu, leading to me having to set my hotkey for Unlocked Grip to the same button as sneak. I did some research on Google and around here, but no solutions. I tried messing with my controls.txt as this post suggested, but it hasn't done anything yet. I tried changing the file to an .ini and renaming the folder in a couple different ways, thinking the OP had mistyped, but no luck there either.

So, after finding a setup I was comfortable with for the time being, I started on my way to Winterhold. There were a few CTDs on the way there which is to be expected for a fresh install with some heavy mods, but I started having a problem that I've never come across before. As I'm walking up to Winterhold proper, probably as all the assets are loading up for that area, my game starts stuttering pretty heavily then completely locks up with all the ambience and footstep sounds still playing. I tried waiting for a few minutes to see if it would fix itself but I don't think that was helping either. After doing my usual troubleshooting and it still wasn't working, I turned to Google to see what kind of problems I may be running into. At first I thought it may have been running out of VRAM, but after trying to disable a couple graphics intensive mods I figured that wasn't it. I have Enhanced Towns and Villages active as well as JK's Skyrim, which I thought might be conflicting causing the freezing but that didn't seem to do anything. So, sensing a pattern, I rolled back to an earlier save and started traveling along the coast to Dawnstar, trying to test if it was just Winterhold causing me to freeze or if it was just going inland into Skyim. So I travel along aways, and after getting right around here, the freezing starts happening again, leading me to think that this problem just starts happening whenever I go inland.

So at this point I've got two options, either figure out a fix for this or hunker down and become an abominable snowman for the rest of my days.

I'm playing on Legendary edition (obviously), latest version of SKSE, using NMM, and LOOT. The only files that aren't cleaned with TES5Edit are the DLCs.
