Well, you nailed the longest part: to make good animations, you need to be a good 3d modeller and have the technical knowledge to convert your animations to the formats used by the Creation engine. The tricky part is that it, in my experience, it looks like the easy plug-n-play animation groups are coded into the ESMs, so you can't just create new ones in CK. To add new animations without overwriting the existing ones, you'll need to use far less intuitive means to assign character animations.
