I too would like to see this. I know there's no way to actually equip weapons since the animation will just crap out, but I would love to just fiddle with my inventory normally while transformed in skyrim. It's a great amount of fun to just idle as as a vampire or werewolf. Also if functionality could be ported to Undeath's Lich transformation (http://www.nexusmods.com/skyrim/mods/40607/?), I know that theres a great potential to roleplay if one could open the quick menu or inventory screen while transformed to equip spells beyond the few provided in the base presentation of the mod, even letting the player equip spells from other mods. I believe that if one could isolate whatever turns off the UI and/or replaces it with the new perk trees while the character is in a morphed state, then disabling that script during werewolf and vampire transformations could follow very easily. I'd do it myself but I'm quite new to using the creationkit, let alone all the workarounds for modding the essential UI pieces.
