I had a similar problem. I think it's a memory problem that causes it, but it's not caused due to your specs rather the game itself. I used this mod http://www.nexusmods.com/skyrim/mods/41592/? and ENBoost. Also some ENB presets can also make the game and save files unstable. I hope this helps~

I too am new to making mods. I was trying to figure out how to implement the AI for my own follower mod and I think I found a solution. When I used the WEJS28SandboxCurrentLocation1024 package instead of the default sandbox package with Serana's mentalmodel the desired outcome is achieved. I hope this helps, if not I'm curious to see what happened to anyone who tries it.
