Maybe it's too much work to be even remotely possible, but it would be really interesting to see dragons with some kind of fur.

You should definitely keep the Norse sounding names. Jotunnheim sounds way better than Giant's home. I'm from Scandinavia so I may be a bit biased though. :)

Unfortunately the solution above only worked for a couple of the missing waterfalls. Most of them remain floating in the air above the giant's camp. Is there any way to use the CK to just copy all of the vanilla waterfalls at their original location and just "insert" them into the game through an esp?

I would love a mod with an alternate start where you play as a bandit, roaming the world and robbing unwary travelers. Maybe it could be quest-based, where you have to enroll other bandits to your group and outfit them with weapons and armor, build your own bandit hideout, set up ambushes, fight over territory with rivaling bandit groups etc. All while avoiding getting caught of course.

Is there a mod that lets you have more sheathed weapons visible on the body in third person? As in have my bow, quiver AND my dagger showing on the character, instead of just the currently equipped one.
