I love nerano manor for stashing all my loot, I've filled it up with blue lanterns/candles to make it all cool looking and have organized stuff into categories on each table and set of shelves (geek) As far as what my character carries, I try to travel light. It's an unarmored assassin/thief character equipped with a daedric longbow and wakizashi (short blade at 100, marksman at 85 or so), masters lockpicks and probes (not sure where I can purchase grandmaster ones), CE water walking shoes, saviours hide, heart ring, azura's ring, that unique amulet that looks like a cowbell for levitation purposes, wraithguard, and in the inventory in case it's needed I have the ring of the kahjit (for stealing stuff) My house has so much stuff all organized nicely, I really should get a screenshot of it because it looks mega cool. Theres a table with about a thousand keys, various rarities, a bunch of unique stuff (I'm in the process of stocking up the museum of artifacts, the stories are fun), a table full of booze (skooma, ancient dagoth brandy, vintage brandy, cyrdillic brandy, flin) an evil table with 6th house amulets, shadow shield, bellhammer etc...the list goes on and on.
