Maybe using OneTweak for Borderless Window? http://www.nexusmods.com/skyrim/mods/40706/? This works for me with MO, SKSE and an ENB InjectorVersion, Win8.1, 1 Monitor

For closing the game with the task manager i just tabbed out and saw my task bar so I could right klick, open task manager and mouse over the icon a sec then it should pop up a window preview so while task manager has focus you can tab up/down arrow keys to select skyrim (not readable but there is only one task with red text (if skyrim isn't responding)) and then hit delete to kill the task. And an easy fix for infinite loading screen for me was to install SKSE and use the memory fix (SKSE.ini).

I use the XFX Radeon HD 7850 1GB with newest catalyst and drivers now i tweaked the ini files and it runs even better

NMM works fine with windows 8.1 for me but skyrim did not launch at all exept in windowed mode. But i got it fixed by: -uninstalling all mods -deleting all files in skyrim directory exept folders -deleting old ini files in documents/my games/skyrim -redownload per repair option from steam -started launcher setting up fullscreen with the resolution going with my monitor now it runs without a problem better than with win8 with a decent increased framerate
