I don't know how long you've been into TES games, but (especially with Skyrim), your race doesn't really matter much except for the racial abilities and powers. My first character got to level 64-ish after 450 hours as a Nordic Rune Witch (basically a Druid). She was unarmed, unarmoured and only used weapons as a last resort. She specialised in Fire and Lightning Destruction magick, Alteration, Conjuration (animals and elementals only with Conjuration Madness), Illusion, Alchemy, Enchanting, a little light Smithing (for followers who were all female and mostly stealthy) and Sneak. As a Nord, all her magickal skills were 15, but she had 50% Frost Resistance, a Battle Cry and FUS RO DAH! It can be a little dodgy at low level as you raise your lowest skills more quickly and so can level up a little behind the creatures of the game world for a little while, but it was great fun. I have lots of mods that make creatures and NPCs more dangerous, anyway. She eventually became so powerful she had 100 in all her main skills and had to become a Ranger just to get more levels for the perks. But a glass bow Smithed to the max and Enchanted to do Fire and Shock damage, along with poisons that do Damage Health, Lingering Damage Health and Paralyse, she really didn't need any Archery perks. So it's certainly do-able. How well you do as any race or character class type really depends on how you play and use what you have. At the moment I have an Imperial Bard.
