Cast a soultrap spell on an animal or daedra, and then proceed to smite the said animal or daedra until dead. You will recieve a message that says you have trapped a soul, and then (depending upon your enchant skill level) enchant a weapon by moving the Azura's Star over your character icon (when you bring up the inventory screen).
