Does the archive file you downloaded for this mod include a readme, and if so does that readme include uninstallation instructions? My gut instinct would be that you haven't lost any sounds - they are just being replaced by files in the Oblivion\Sound\... folder somewhere. So if you just work out what files the mod added and remove them it should be OK. (N.B. Be cautious and move the files in question out of the way instead of deleting them just in case it doesn't go well). I also recommend that anybody installing / re-installing Oblivion make a clean copy of the Data file after official update patches and before mods. Bear that in mind for next time, in case you end up having to reinstall.
DavidBudreck
I'm guessing the sounds ARE gone. To get them to play without rescripting them the easiest way is to replace the old with the new, and that is what a majority of mods do. Like ptbptb said, you sould have a complete backup of the data folder for situations like this. If you don't, you can always look for more new sounds that you might like... malonn
I don't think the sounds are gone. Just uninstall the mod.
Eiries
The game's stock sounds are located in a .bsa file, which means they're fine. ptbptb's got it; if there isn't uninstallation instructions included with the mod, then just look at the zip file it came in and see what and where all the sounds are. Once you get rid of them, the game's base files will pick up the rest.
