Best way to start learning how to modify in-game models?

Hi, I was wondering if there were any good walkthroughs or anything of the sort to help a beginner who would like to try his hand at modeling items, environments, characters, etc. Probably starting with the easiest thing, like using preexisting models would be best. I know very little about this. Thanks in advance.
