I'm looking for a way to do this without having to download and use the geck, like an ingame feature or something. I'd like to be able to use the character appearance features in the game for it.

There's no such mod for now that allows you to make your own companion and alter his/her appearance. But you may try this:

 

Sharing and caring companion - allows you to make any in-game NPC your companions,they will have basic commands.

creating a npc in the geck is very simple i would suggest leaning to use it.
