That depends on if they are replacements or add-ons. If they are replacements for the originals only use one set. If they are add-ons you can use as many as you want but you have to edit the chargenmorphcfg.xml file in your My Documents\BioWare\Dragon Age\packages\core\override folder so they show up.

The main way to add new face morphs is to make sure the .mop's name doesn't match one already on the list. Then you need to manually add it to the chargenmorph. I'm not sure if there is a limit or not but if you were to find it that would be through trial and error. I think the originals are the HM_CPS_P01 through HM_CPS_P08.And to override one of those you just need to match the name.
