davidlallen
In order to apply a new dds file to an existing nif file, you need to use nifskope to edit the nif file. Basically, the nif file contains all the 3D data for the mesh, but it doesn't contain any of the texture information. All the texture information is in the dds. The nif file contains references to the dds files. So using nifskope, you replace the references to the old dds files, with the new dds files. I am not a 3D graphics person, but I have learned enough about nifskope from its own tutorials to perform this type of change. Nifskope displays the nif as a "file browser" type of tree; keep opening up the levels until you find dds file names. Replace the old names with your names and it will all work.
