My non-expert guess is that "archive invalidation" is not enabled. Enabling it might do the trick.

I do this via NMM (see bottom of the tools menu). And I have had instances in the past where NMM - for whatever reason - crashed at some point. And when restarting it, "archive invalidation" would not be enabled anymore. However, I only would notice that when encountering similar issues to the ones you are mentioning above.

Let me know if this suggestion works.

Yes, this is an archive invalidation issue. One of those game engine bugs that new players have to find out about the hard way. If you are using NMM, then make sure that archive invalidation is active in the Tools Tab, the same if you are using FOMM. I have no idea if Mod Organizier has that functionality or not (I am strictly a FOMM person). Another alternative is to download and install Archiveinvalidation Invalidated, which can be found here. If you go this route, you need to download and install it manually, as this is not a standard mod: it is an executable file.

i tried both of these ideas but the texture copying remains for some unkown reason ;~;

If you mean you used the Archive Invalidation in the mod manager and the downloaded ArchiveInvalidation Invalidated!, you cannot use both. You can use one or the other. To use the one in the mod manager, disable Archive Invalidation (remove check mark) and then enable it (apply the check mark). If this does not work, you do not have the textures installed properly.
